Cheddar Cheese Cake
CHEDDAR CHEESE CAKE

Loyang : 22 cm bulat (untuk adonan) + loyang untuk air rendaman
~ me : loyang bongkar pasang 24cm + loyang kotak 40 x 60cm
karena menggunakan loyang yang lebih besar jadi tinggi cake setelah matang adalah sekitar 4cm
Waktu memanggang: 60-70 menit, 160 °C, au bain marie
Bahan-bahan:
Bahan I :
200 ml Susu UHT cair (Ultra)
60 gram Butter (Orchid unsalted)
180 gram Cheddar cheese
Bahan II:
30 gram Tepung terigu
25 gram Maizena
3 buah Kuning telur
1-2 sdt Air jeruk ~ me : air dari 1bh jeruk lemon ukuran sedang
Bahan III :
5 buah Putih telur
120 gram Gula pasir
1/3 sdt Cream of tar-tar
Bahan IV : ~ me : ga pake
1 sdm Selai strawberry (bisa diganti aprikot atau blueberry)
2 sdm Air matang
Strawberry / peach / orange/ kiwi, sesuai selera
Cara membuat:
1. Siapkan loyang 22 cm, olesi dengan mentega, lapisi dengan kertas roti, olesi sekali lagi dengan mentega hingga rata. Lapisi bagian luar loyang dengan aluminium foil, pastikan loyang kedap air. Siapkan loyang untuk air rendaman, isi dengan air sampai 1/4-nya (saat memanggang ketinggian air tidak boleh melebihi 1/3 tinggi loyang adonan).
2. Campur mentega, susu cair, dan keju cheddar yang sudah dipotong2 kecil (Bahan I) --
Shirley's note: diparut aja -- dalam panci kecil, lalu letakkan di panci tim yang sudah berisi air panas agak banyak. Tutup panci tim dengan lap bersih yang kering. Nyalakan api selama 2-3 menit, lalu matikan api. Biarkan panci tertutup selama 5 menit. Buka panci, aduk-aduk adonan krim hingga rata.

~ Me: spring foam pan 24cm and baking pan square 40 x 60cm
because using the bigger pan, so after cooked the high of the cake is around 4cm
Baking time: 60-70 minutes, 160 ° C, au bain marie
Ingredients:
ingredients I :
200 ml of fresh milk
60 grams unsalted Butter
180 grams of Cheddar cheese
ingredients II :
30 grams of wheat flour
25 grams of cornstarch
3 pieces of egg yolk
1-2 tsp Lemon juice
ingredients III :
5 pieces of egg white
120 grams of sugar
1/3 tsp cream of tar-tar
ingredients IV :
1 tablespoon strawberry jam (can be replaced with apricot or blueberry as you like)
2 tbsp Boiled water
Strawberry / peach / orange / kiwi, as you like
How to make :
1. Prepare a 22 cm baking pan, spread with butter, cover with baking paper, spread once more with butter. Cover the outside of the pan with aluminum foil, make sure the pan watertight. Prepare another baking pan for water, fill it with water until 1/4 of pan (when baking the cake, the water level must not exceed 1/3 of high baking pan for dough).
2. Mix butter, milk, and cheddar cheese that already shredded (Material I) -
in a small pan, then place it on the other pan that already contains rather a lot of hot water. Cover the pan with a clean cloth. Turn on the flame for 2-3 minutes, then turn off the heat. Leave the pan covered for 5 minutes. Open pot, stir the cream mixture until blended.
~ Me : cooked directly over the small fire using teflon saucepan
3. After the cream of cheese is set, sifted flour and cornstarch (Material II) into the cream of cheese, mix well until blended. Add the egg yolks. Add the lemon juice. Make sure all the ingredients mixed well.
4. Put a pan of water to the oven, turn the oven with a temperature of 160 ° C. If you are using oven that don't have a thermometer, just using the small fire
5. Beat the egg whites, sugar and cream of tar tar to 'soft peak' alone (don't get too stiff ). add the white egg batter into cream cheese batter mix well and pour batter into the pan.
6. Checks if the pan is hot enough. Water immersion is not necessary to boil, just until there are enough small bubble at the bottom of the pan. Place the dough pan on it.
7. Bake for 80 minutes (note: revised per February 2011). Test with a toothpick. If still not cooked, you can added another 5-10 minutes. When already cooked, the top of the cheese cake stay yellow (not brown) and no apparent golden.
~ Me : using up fire for a few minute to get golden brown color
8. When the cheese cake warm, directly turn the cake to make it out from the pan. To make the cake not sticky, use a dry napkin to flipped. Do it gently because this cheese cake is very soft
~ Me : because I'm using spring foam pan cover with baking paper inside, so after the cake is cooked just open the side of baking pan and remove to a serving dish by lifting the bottom of the baking paper, it will make the cake perfect
9. Completion : mix the apricot jam with boiled water on the stove until warm.
Brush the top of the cheese cake with jam, decorated with fruit, whipped cream or other garnish as you like
* Note from Shirley :
Revision as of February 7, 2011: 60 minutes bake time for CCC using personal cup on aluminum foil (weighing 50-70 grams). If using cheese mold oval, or round baking dish, then added a 90-minute bake time. If not, the bottom of the cake will be too wet.

Blueberry Cheesecake
Nah, untuk ultah Papa november yang lalu, aku buatkan juga cheesecake ini ... hihihi ... telat deh laporannya ... soalnya lupa terus ... baru ingat pas liat fotonya ... oh iya, yang ini kan blom dibuat laporannya ... hehehe ...
BLUEBERRY CHEESE CAKE

Bahan untuk crust (dasar cake) :
250 gr biskuit contoh : biskuit marrie
100 gr margarine lelehkan
1/2 sdt vanila bubuk
Bahan cake :
200 gr gula pasir
4 btr telur
1 kg cream cheese
250 gr sour cream
Bahan frosting :
250 ml whipped cream cair
1 sdm gula pasir
250 gr selai blueberry
Cara membuat :
- Siapkan loyang bongkar pasang 22 cm, olesi mentega
- Hancur biskuit hingga halus, tuang margarine leleh dan vanila, aduk rata.
- Adonan cake, kocok telur dan gula hingga kental dan mengembang, masukan cream cheese dan sour cream bergantian sambil terus dikocok sampai lembut.
- tuang adonan cake diatas crust, oven dengan cara au bain marie selama 90 menit, angkat, dinginkan, keluarkan dari loyang.
- Dinginkan dalam lemari pendingin sampai 1 jam. Keluarkan.
- Kocok whipped cream dan gula pasir sampai kental, olesi diatas cake. Ratakan selai blueberry diatasnya, hias sesuai selera.
- Simpan dalam lemari pendingin selama sekitar 4 jam hingga set
BLUEBERRY CHEESE CAKE

Ingredients for crust (cake base) :
250 grams of biscuits
100 gr margarine, melted
1 / 2 tsp vanilla powder
Cake Ingredients:
200 gr sugar
4 eggs
1 kg cream cheese
250 gr sour cream
Frosting ingredients:
250 ml whipped cream liquid
1 tablespoon granulated sugar
250 grams blueberry jam
Method:
- Prepare the baking pan 22 cm springform, basting with butter
- Crushed biscuits until smooth, pour the melted margarine and vanilla, mix well.
- For cake, beat eggs and sugar until thick and fluffy, add cream cheese and sour cream alternately while continuing whipped until soft.
- pour the cake batter above the crust, oven with au bain marie method for 90 minutes, remove, let cool, remove from pan.
- Chill in refrigerator up to 1 hour. Remove.
- Beat the whipped cream and sugar until thick, spread over cake. Flatten blueberry jam on top, decorative as you like

My First Blueberry Cheesecake
very curious to make it too, so I try to find the recipe on the internet .... I browsing everywhere, and finally I got the recipe ......
prepare the ingredients, then I made this for my beloved family ... nothing could make me happier than make good food for them ... :D
when I make it, my kids can't wait to try, many times they ask .... when the cake cooked Mom ? ... ;p
finally, the cheesecake finished as well ... I decorated a little with whipping cream and toasted almonds on the side ... and of course with blueberry jam for the topping ....
My kids love it, a piece is not enough, they want more again and again ... I am very glad to see that, not in vain I made it ...
Another time I'll make it again ... for sure ... :D

White Rosette on Manggo Cheesecake
and because I want to make an unusual cake, so I try to combine a layer cake with cheesecake .. for cheesecake I add mangoes that I've been mashed into it ...
I brought this cake to the coffe morning event along with the ASEAN Ladies Circle , ASEAN community here ..
as a basic cake, first I made layer cake ... in Indonesia, we call this cake LAPIS LEGIT .... that I made in one round pan for the bottom and one square pan, then cut it into pieces and flattened on the sides of the cake ..
after that I made mango cheesecake, then immediately poured over the base layer cake before, and store in refrigerator .. when cool enough, I make mango jelly for the topping, then decorated with white roses and the leaves ... that's all ... so simple right ... :D
mixture of spices in a layer cake, cheese and mango on cheese cake .... turned out to make the taste really fresh, create a different sensation .... hhhmmmm

Chocolate Cheese Cake
supaya beda dari cheesecake yang biasa, bagian dasarnya ga aq buat dari biskuit, tapi dari sponge cake yang nyoklaaaaaaat abisssssss ... jadi judulnya serba coklat deh .... ;p
ini Choco Cheesecake-nya yang sudah dipotong, langsung diserbu sama Bocils ... masih ditahan-tahan ... sebentar ya, Mama foto dulu, nanti baru boleh diabisin ... hehehe
ternyata habis dalam 3 hari + pesen dari dede Alel .... Mama, nanti aq mau dibikinin lagi yaaaaaaa ... bereeeeeeeesssss Bos ....

Japanese Choco Cheesecake for Leyla
karena blom pernah bikin b'day cake yang dihias freshfruit + pengen ngasih kenangan indah sebelum kami pulkam, jadi aq bilang aja ... ya udah, nanti aq bikinin aja ya ... cari-cari ide, karena kemarin baru bikin JCC, jadi langsung deh kebayang bikin JCC lagi, tapi karena Leyla suka makan coklat, aq bikinin ganache aja buat olesannya ..
H-1 bikin JCC, ganache + buttercreamcheese-nya, simpen deh dikulkas ... hari H, pagi-pagi aq olesin seluruh JCC dengan ganache, trus siap-siap deh berangkat kerumah mba Ira ... pergi kesana bawa JCC setengah jadi + segambreng peralatan perang .... sampe lazy susan aja ikut dibawa, abis ntar ga bisa kerja klo peralatan ga lengkap .... hehehe
begitu sampe disana, langsung deh aq hias cakenya .... dan inilah hasilnya ... JCC oles ganache + topping buah segar berupa fresh orange + kiwi + fresh cherry yang kebetulan sedang musim, ditambah sedikit hiasan buttercreamcheese dan dikasih lilin-lilin huruf bertuliskan " Happy Birthday "
penasaran juga dengan rasanya, pas ngerasain ternyata cukup surprise juga ... campuran yang unik antara JCC + ganache + buttercheesecream .... secara keju dicampur coklat gitu loooohh ... hihihi ... apalagi masih ditambah segarnya buah ... hhhhmmm ... nyam nyaaaaaaamm ..
bisa jadi alternatif neh klo bikin cake lagi ... :D

My First Japanese Cheese Cake
dengan PD-nya aq langsung bikin 1 resep ... hehehe ... alhamdulillah, bisa langsung jadi, surprise juga seh ... ga tau neh, udah kebiasaan, klo nyoba resep ga bisa cuma setengah aja, rasanya males gitu, soalnya sekalian pengen tau juga klo satu resep itu seberapa gede seh jadinya, supaya klo bikin lagi udah tau pasti ukuran loyang berapa yang harus dipake ... ini bikinnya pake loyang bongkar pasang, jadi gampang banget pas ngeluarinnya ..
inilah hasilnya ... JCC pertama-q ... ga dihias apa-apa, karena mau dimaem sendiri aja ... hihihi .. *ngeles.com* padahal judulnya cuma satu ... terlalu malas buat ngedekor ... hehehe ..
walaupun ga nyobain JCC-nya, yang penting pas ditelepon Ngkung seneng banget dapet perhatian dari anak cucunya yang jauh dirantau ini + doanya semoga Ngkung selalu sehat dan selalu dalam lindungan Allah SWT .... mudah-mudahan qta masih dikasih umur untuk ketemu lagi ya Ngkung ... amin ya Rabb

Orange Chocolate Cheese Cake
blom pernah bikin Chocolate Cheese cake, jadi penasaran deh ... karena punya orange banyak, jadi aq coba yang Orange Chocolate Cheese Cake ..... gabungan rasa manisnya coklat dengan asam + wanginya orange ... hhmmm .... perfecto ..
pas dicoba ternyata enak banget, terutama buat kami sekeluarga yang memang chocolate lovers ... hhmm .. masih punya banyak PR buat nyoba resep-resep yang lain neh ... :D

Unbaked Blueberry Cheesecake
pas belanja bulanan, mampir ke toko yang jual bahan-bahan impor, ternyata ada 2 kaleng blueberry, ya udah beli deh ... abis itu beli juga bahan-bahan yang lainnya ....
pas ada acara halal bihalal di Wisma Duta, aq bikin lagi buat dibawa ... alhamdulillah ternyata banyak yang suka, dan habis dalam waktu yang ga terlalu lama .... sejak itu jadi ketagihan deh buat bikin cheesecake .... tantangan berikutnya harus nyoba bikin yang dipanggang neh .... ;p

diajarin dari cara ngalusin biskuit buat base-nya, sampe bikin caheesecake-nya ... ternyata ga terlalu sulit seperti yang aq kira selama ini ... hehehe
begitu ada acara kumpul-kumpul, coba-coba aq bawa, ternyata pada suka, jadi sering bikin deh .... gara-gara udah bisa bikin cheesecake sendiri, sejak itu jadi mulai ketagihan deh bikin macem-macem cake ... alhamdulillah, bisa berlanjut terus sampai sekarang .... ternyata baking juga bisa bikin addict lho .... :D

My First Tiramisu Cake

untuk hiasannya, selain yang klasik dg. menggunakan coklat bubuk, aq tambahkan hiasan buah segar ..... kebetulan disini sedang musim strawberry dan sepulang dari kantor Papa bawain satu mangkok besar (disini dijual ditoko sayur sudah dalam ukuran per kilo dalam wadah mangkok/kotak) ... pas banget waktu cakenya lagi dihias, jadi ditambahin deh buat hiasan ... ditambah mba Dea maunya dikasih sprinkle, hasilnya jadi rame deh cakenya .... :D
ini cakenya setelah dipotong, keliatan lapisan dalamnya yg difilling dg. olesan tiramisu + diperciki air kopi ... mamam yuuuuuuukkkk ...
buat yang pengen bikin, ini resepnya yaaaaaaaa ...
TIRAMISU CAKE

bahan Cake :
6 butir telur
150 gr gula kastor
1/2 sdt ekstrak vanili
150 gr tepung terigu ~ me : 100gr terigu + 50 gr maizena
100 gr mentega, cairkan
bahan olesan :
600 cc mascarpone cheese
200 cc whipping cream
100 gr gula halus
75 cc Kahlua Tia Maria (optional)
~ me : diganti dg. campuran 50 cc air panas + 1,5 sdt kopi instan + 2sdt gula
bahan taburan :
1 sdm coklat bubuk
~ me : 6 bh strawberry segar, potong 2 bagian
cara membuat :
* Cake :
- kocok telur + gula hg. kental dan naik, masukkan ekstrak vanili, kocok lagi hg. tercampur.
- masukkan campuran terigu sedikit demi sedikit hg. tercampur rata
- masukkan mentega cair, aduk rata.
- tuang dalam loyang 20cm, yg sudah dialasi dg, kertas roti, diolesi mentega +
ditaburi tepung terigu
-panggang dg. suhu 180C kurang lebih 50 menit hg. matang, angkat, dinginkan.
- belah cake menjadi 3 bagian, sisihkan
* Olesan :
- campur jadi satu mascarpone cheese + whipping cream + gula halus, koock hg. kental ~me : simpan dalam lemari es hg. sedikit kaku
* penyelesaian :
- perciki tiap bagian cake dg. kahlua~ me : dg. campuran kopi instan
- olesi setiap bagian cake dg, bahan olesan, tangkupkan
- olesi seluruh permukaan cake dg. sisa bahan olesan, hias sesuai selera, taburi dg. coklat bubuk, dinginkan dalam lemari es hg. set
~ selamat mencoba ~
