Mie Goreng



MIE GORENG
by Rinto Habsari dalam buku Rijsttafel, jamuan Indonesia Gaya Eropa modified by dapur Deana

bahan :
3 sdm untuk menumis
300 gr udang segar kupas ukuran kecil
~ me : 300gr fillet ayam, potong kecil2
5 bh bakso ikan, iris-iris
~ me : ga pake
2 butir telur ayam, kocok rata
100 gr taoge, buang akarnya
100 gr kol, buang tulang daunnya, iris kasar
250 gr sawi hijau, potong melintang 3 cm
~ me ga pake, diganti dg. 250 gr wortel, potong korek api tipis
250 gr mie telur kering, seduh air mendidih hg. lunak, tiriskan
2 sdm kecap manis
1/2 sdm kecap asin
1 sdm kecap Inggris
100 ml kaldu ayam

bumbu, haluskan :
6 butir bawang merah
3 siung bawang putih
3 butir kemiri goreng
1/2 sdt merica butiran
1/2 sdt garam

Pelengkap :
Acar siap pakai
Sambal botolan

cara membuat :
- panaskan minyak, tumis bumbu halus hg. harum
- masukkan udang, aduk2 hg. udang berubah warna
~ me : masukkan daging ayam, aduk2 hg. ayam berubah warna
- tambahkan bakso ikan, aduk rata
~ me : skip
- tuang telur kocok di salah satu sisi wajan, aduk cepat dan rata hg. berserabut kasar, aduk rata
- masukan taoge, kol dan sawi, aduk rata hg. sayuran layu
~ me : masukkan wortel, aduk2 hg agak empuk, masukkan kol & taoge
- tambahkan mie, kecap asin, kecap asin, kecap Inggris, aduk cepat diatas api kecil
- tuangi kaldu, aduk2 dg. sendok kayu hg. kaldu meresap
- angkat, sajikan bersama pelengkap
